On my iPhone 4s, I have YouTube version 10.11.11546, and by changing both version numbers to the latest YT version (17.20.3) it sorta works, but you cannot play videos or sign in, it will crash

Bro if youtube home screen is not working u can downgrade youtube version to 10. And then change the info.plist to 15.10 or 17.02 It will fix your all problems next video plz make and credit me
