I have a fucking Lelit Anna with a custom bottomless portafilter, competition grade filter basket and modded pressure valve with WDT tools, 0,001 g accurate scale for weighing shots and an 1zpresso JX PRO hand grinder, and a whole notebook on all the shots I've pulled with all specialty single origin coffees with all variables logged and tracked. Yet what I drink every day is fucking instant coffee. Why? I like the taste, the convenience, and it doesn't give me heartburn. It's like that scene in Evangelion where they kill that one angel by letting it evolve indefinitely until it just dies as the final point of its evolution.

Gotta say that I've really enjoyed this and the Dunning-Kruger video. Something about the writing and pacing feels like you've gone a step beyond, and it's super enjoyable. Keep up the great work boss! (Actually what do we call you? Hyaenas usually have a matriarch afaik so do we call you that? Or patriarch since you're a man? Or do we call your wife the boss since she'd be the matriarch? I think we need some clarifications here)
