first of all, put the wood planks in the center of your inventory second of all, on a singleplayer world the crafting table is open for a lot less third of all, to imitate the trick, put the wood planks at/near the center of your inventory, place a crafting table, jump off and right click, (you fall slower and this compensates for the delayed crafting speed on a server) then speedcraft the boat to clutch. Took me around 30 attempts to learn the crafting pattern and the clutch, but after getting that memorized it's about 50/50 depending on my aim in the interface. Another important thing to note is that Dream scraps the footage if he dies in manhunt before he could enter the nether, although the hunters still get paid. This means he almost always does insane stunts for the first few minutes of the video, as such stunts are the difference between an interesting manhunt and scrapped footage.
