To celebrate 20 years of genre-defying gastronomy, Grant Achatz brought his Michelin three-starred temple of modernist cuisine, Alinea, from Chicago to Brooklyn for its first-ever NYC residency. Over two-and-a-half immersive hours, guests were led through four rooms and 15+ courses of edible theater—think tiny, gelatinous Chicago dogs, glow-in-the-dark desserts, and that iconic edible balloon.
