“Killer team, like, we call ourselves dragon slayers. It’s kind of funny a joke, but we actually kind of really believe that. Just like any cool idea, it starts with that. And then, I don’t know, we really take pride in that. Right. So, and how we see building team is everyone has a different talent. And while Gracious Hospitality Management obviously is our FMB and hospitality company, but we genuinely believe we’re more of a talent management company. Every chef has different talents. One is very creative, one is extremely efficient at producing, and one is very good at financials and creating. You know, how do we actually find those opportunities, where they’re the best at what they do and really be able to, step on the gas with it and really empower them and give them autonomy.”
Speaking at House of Robb, Art Basel Miami Beach, Simon Kim—the visionary behind COTE Korean Steakhouse and COQODAQ—shared his unique perspective on leadership. For Kim, Gracious Hospitality Management isn’t just an F&B company; it’s a talent management powerhouse. By aligning individual strengths with their roles and fostering a culture of empowerment, Kim emphasizes the importance of leading with self-awareness and humility as the “top dog.”
